hey there sunshine, i’m jen!

You’ll find me in my kitchen on Sunday afternoons armed with my plant-based meal-prep schedule, Gilmore Girls reruns, and a lemony sparkling water.

This has been my ritual for over two years now, and started when I realized that I wanted to better my cooking skills, intentionally eat more plant-based meals, and free up my busy weeknights.

The secret sauce to achieving all three of these goals? Plant-based meal prep. And after the trials and successes, I created the happy here to share my simple, beginner-friendly, easily adaptable, plant-forward plates and tips with you, in hopes that it will bring more joy and ease to your cooking experience, and make your busiest days a littler easier.

No matter where you are on your plant-based journey, I am here to make it not feel so complicated, and I couldn’t be happier you’ve landed in my little corner of the internet today.

types of recipes you’ll find on the happy here:

• Make-ahead plant-based lunches you look forward to (no more #saddesklunches).

• Rainy-Sunday soups to remind you that the practice of cooking can be rejuvenating, and a time to slow down. Alexa, play, “Put Your Records On” by Corrine Bailey Rae.

• The perfect 5-minute white bean hummus for when your bff is spontaneously dropping by with the pinot.

• Simple meals designed to be prepped in advance or made quickly on the fly so that you have a clean kitchen in time for Real Housewives, to call your mom, to start that podcast you’ve been dreaming up, or to just be still with a cup of tea.
